Pumpkin Cake Cookies
(adapted from Big Red Kitchen)
Ingredients:
- 1 (15.25 oz) box yellow cake mix
- 12 oz Libby's 100% Pure Pumpkin
- 1 tbsp pumpkin pie spice or allspice (optional)
That's it. Beat together the cake mix, pumpkin and spice. Drop by large spoonful onto greased baking sheet. Bake at 350 degrees for 10-12 minutes, or until a toothpick comes out clean.
These cookies are soft and chewy... and they stay that way, if you're lucky enough to have them last! Enjoy!
